Are your games flexible?

I want a flexible game for up to 20 people, ie where the murderer is only chosen on the night after the guests arrive, so that if someone is poorly etc, it doesn’t spoil the game. Do any of your games fit the bill?

My response:

Not quite, no.

In Happy Birthday RJ the murderer is determined as the game is played (as you describe), but that's for a smaller number than 20 players.

In the others the murderer is all pre-cast.

What you could do thought is hold back the character backgrounds and details until the last moment to minimise the risk of someone dropping out.

You can still tell people who they are playing (so that they can find an appropriate costume), but if you haven't sent the character details out then that makes it easier to move characters around if someone can't make it.
